Job Title: Commis Chef (Cook)
Location: Lagos
The Role Statement
- The job incumbent is responsible for mise en place, quality preparation, dish out and presentation of food to the highest culinary standards set by the Company and specifications set by the airlines.
Main Accountabilities
- Cooking tasty and quality meals
- Cooking skills (grilling, roasting, etc.)
- Following through requisition process
- Ensure food is prepared in line with standard recipe cards
- Preparation lists are completed in a timely manner
- Ensure no cross contamination occurs within the kitchen
- Ensure kitchen is cleaned at the end of service periods
- Report any shortages in stock to appropriate employees
- Maintain good personal hygiene at all times
- Maintain a clean workstation at all times
- Adhere to all CCP’s and CP’s
- Adhere to all company safety principles and guidelines
- Maintain confidentiality on the company’s business affairs at all times
- Mise en place to be completed as outlined in the kitchen operation handbook
- Finished plates served in line with guidelines set out in the standard recipe cards
- Meals are served within reasonable timeframes
- Receive and store all food as outlined by company and airlines
- Always portion, plate and serve food according to hygiene and safety principles and procedures in a time efficient manner
- And any other assigned duties
Knowledge, Skills and Experience
- Minimum of a catering/culinary certificate
- Minimum of 1-3 years business experience in a well-planned kitchen in a structured organization
- Experience in hotel catering and/restaurants is a must
- Measurement/numeric skills is desirable
- Have good communication skills
- Mastery of intercultural sensitivity
- Must be fluent in English.
- Knowledge and experience of in-flight catering is desirable
- Good understanding of catering principles and regulations
Job Title: General Catering Assistant
Location: Lagos
Employment Type: Full Time
The Role Statement
- The job incumbent is to help out in the kitchen and to be responsible for hygiene and cleanliness within food preparation areas according to highest standards and quality set by the Company and specifications set by the airlines
Main Accountabilities
- Wash, peel, chop, cut and cook foodstuffs and help to prepare salads and desserts
- Ensure chefs are equipped with foodstuff and tools they need
- Ensure that the presentation of food is of the highest quality at all times
- Ensure that tasks are done within deadlines
- Ensure food preparation areas are clean and hygienic
- Wash utensils and dishes; and ensure they are stored appropriately
- Dispose rubbish
- Organize linen laundry
- Clean food preparation equipment, floors and other kitchen tools and areas
- Sort, store and distribute ingredients
- Should have good personal hygiene and cleanliness on and off duty
- Adhere to all CCP’s and CP’s.
- Adhere to all company safety principles and guidelines
- And any other assigned duties
Knowledge, Skills and Experience
- Minimum of Primary Education; MUST be able to read and write
- Less than 3 years' experience in a similar role in a restaurant or full-service hotel or similar businesses
- Knowledge and experience of air flight catering is desirable
- Must be able to communicate effectively and have good customer service orientation
- Have a good understanding of intercultural differences and be able to manage such sensitivities with maturity
- Must be able to speak English.
Job Title: High Loader Truck Driver
Location: Lagos
Main Accountabilities
- Ensure goods and airline equipment from store are collected
- Return soil carts to dishwashing section
- Load and unload goods and airline equipment to and from the company and aircraft according to the company requirement
- Maintain the vehicles and their facilities in good working condition
- Maintain all vehicles, internal and external, clean and tidy
- Drive vehicles to outside contractor for service and checks as instructed
- Report the damage or malfunction of the vehicles to department head if any
- Tidy up work areas
- Keep all required records of dispatch and delivery
- Monitor excesses or shortages and report to base for necessary action
- Perform all ad hoc duties assigned by Management.
Knowledge, Skills and Experience
- Minimum of Secondary Education
- Relevant valid driver’s license
- 1-3 years relevant work experience preferably in a similar role.
- Experience in inflight airline catering is desirable (high loader trucks)
- Good understanding of customer service is essential
- Have good communication skills
- Mastery of intercultural sensitivity
- Must be fluent in English.
